Ah, the things you can do with a Cuisinart and a frying pan!
Just for fun, I looked around the garden to see what I could put in a latke. I found:
Carrots
Zucchini (from the freezer)
Chioggia Beets
and of course, potatoes
So here, they are, the Latke Rainbow Coalition!
